This particular condiment is made from a fermented paste of boiled soybeans, roasted grain, brine and aspergillus oryzae or aspergillus sojae molds. The paste is then mashed to bring out the liquid form of soy sauce. We, at Annapurna, use the traditional method of caramel preparation to get the original color and flavor.
